The gist: Kevin Taylor is widely recognized as a pioneer of the modern Denver dining scene. Following in his footsteps, his son Ryan was a 30 Under 30 awardee in 2015 for his work at Kevin Taylor’s at the Opera House. Now, with his father for a partner, Taylor the younger aims to break whole new ground in the fine-dining desert that is Broomfield as the exec chef of Hickory & Ash, which opened on Friday. This contemporary American “meatery,” as he calls it, is “something new and different from what I grew up under.” Though clearly informed by his high-end training, “it’s accessible, not super-stuffy,” he says.
